Free Low Carb Salad Recipes
Here are two of my favorite free low carb salad recipes. I got the first recipe from another source, but I simplified it into a recipe that I am actually likely to prepare! The second recipe is a basic taco salad that I arrived at through trial and error.
Free Low Carb Salad Recipes #1: Bacon and Egg Salad
Free Low Carb Recipes Ingredients
- 10 slices bacon
- 4 hard-boiled eggs
- 2 tbsp Worcestershire sauce
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1 head of lettuce of choice
- 1 green pepper
- 2 stalks celery -- chopped
Directions for Free Low Carb Recipe
1. Cook the bacon until brown and crispy Drain and crumble. I like to start the bacon in the microwave for a minute or so
2. Quarter the eggs.
3. Blend Worcestershire sauce, oil, and lemon juice. Set aside.
4. Wash and drain lettuce. Chop green pepper.
5. Mix lettuce (which has been broken into bite-size pieces) with the celery, green pepper, bacon, and eggs.
6. Pour dressing over all and toss lightly.
NOTE: You certainly may use vinegar in the salad dressing if you wish. A little paprika is nice sometimes, too. But I wanted to give the bare bones, because we need recipes that are easy, too. Besides, I can't stand vinegar. Don't know why, but it's true.
This recipe is based loosely on a recipe exported from MasterCook (from www.carb-lite.au.com)
Free Low Carb Recipes #2: Easy Taco Salad
Free Low Carb Recipes Ingredients
- 1lb Hamburger
- 1 packet of taco seasoning (low sugar and no msg, if possible)
- 1 head of iceberg lettuce
- 8 ounces of grated cheese (maybe 4 cheddar and 4 mozzarella)
- A tomato
- 4 ounces of sour cream
Free Low Carb Recipes Directions
Cook hamburger on a skillet, with 2-3 ounces of water and seasoning mix. Cook until done.
Chop lettuce. I like to chop it in very narrow strips, and let them be long and stringy. Maybe it fills in for the absence of spaghetti noodles in my life.
Spread the lettuce on 2 plates.
Put half of the meat over each salad.
Put half of the sour cream over each salad.
Put half of the cheese on each salad.
Dice the tomato and put half on each salad.
Now these are pretty big salads. So you might want to make three or four salads out of this. What I do depends on whether I am eating 5 smaller meals in a day, or three larger ones.
These are two excellent free low carb recipes. Both of these take some time to prepare, but they have been left fairly simple so they don't take too much time--maybe 30 min max. This is real life cooking for real people. These are salads I actually make for myself. And I'm lazy (er, I mean efficient). If you like recipes with 14 exotic ingredients and 12 different spices, I guess you'll have to find those somewhere else :) Sorry.
Thank you for reading this.
Sincerely,
Jim.
